Galangal is a perennial plant of the reed family. The roots of this plant are creeping, up to 100 centimeters long and 2 centimeters wide. Flowering shoots of galangal grow from 40 to 150 centimeters in height from the roots. Its flowers are white, concentrated in cone-shaped inflorescences. The raw material collected is galangal roots, which are recommended to be dug in the autumn from four-year and five-year plantations.
The excavated roots need to be washed, cleaned, cut into pieces and dried in the sun. Pieces of calendula root 10 centimeters long and 2 centimeters wide are most suitable. These pieces are reddish or browned on the outside and brownish-orange on the inside.
Health properties
Galangal roots contain 0.5-1% essential oil containing cineole. Galangal roots also contain evgenol, sesquiterpenes, galangin, camphorine, and alpinol. A decoction of galangal root in Ayurveda is recommended to improve appetite, gastrointestinal function and relieve abdominal pain.
Nutritional properties
The smell of galangal roots is reminiscent of ginger, but is more aromatic, has a pleasant taste similar to pepper and a delicious citrus flavor. A large proportion of the essential oils provide a spicy aromatic taste suitable for most dishes.
