These carrot waffles are so flavourful and delicious that I liken them to a royal breakfast.
You can use pumpkin or sweet potatoes instead of carrots. And they can be served with a variety of toppings - cream cheese and salted salmon, with a fried egg and vegetables, with feta cheese and beetroot.
Ingredients:
200 g carrots
2 eggs
1 orange
4 tbsp. wholemeal wheat flour
30 grams of hard cheese
2 tbsp. olive oil
2 cloves of garlic
1/4 tsp. ground coriander
1/4 tsp. ground turmeric
2 thyme sprigs
Salt and black pepper to taste
Directions:
1. Cut the carrots into 1 cm thick slices and place in a baking tin. Pour the orange juice and olive oil over them, add the orange zest and thyme sprigs. Bake the carrots in a preheated oven at 190 degrees C for 50 minutes.
2. Cool the carrots and mash them in a food processor together with the eggs and garlic. Stir in flour, grated cheese and spices.
3. Bake the waffles in a well heated waffle iron.
4. Serve with your choice of accompaniments.
